I believe there are some of the odor molecules have an acid component to them. I read that the baking soda reacts with those components changing their structure, thus eliminating the odor.

Yes! It is a very clever product - contains soap, baking soda, microparticles that scrub well, etc. Kudos to the person who came up with that!
