Which is the best rice that be used to make idlis? I have experimented with Idli and Ponni par boiled rice. Ponni par boiled rice gave softer idlis but were difficult to grind as the batter was more sticky in consistency. What has been your overall experience?
Idli rice gives fluffier idlis compared to parboiled. But parboiled has so many uses in South Indian kitchen. Comparatively, idli rice is a 1 trick pony. So, I often use parboiled at home.
And what about basmati parboiled rice to idly rice compared for making idlis? And also I have heard about making chickpea flour idlis (for diabetics) - so in I heard ppl. using 2:1 ratio for ckickpea flour to rice. For that also will basmati or regular parboiled rice be better than or even equal to idly rice. Good blog btw!

My intake is 3 times everyday, that makes 21 servings. Is this a risk for me and my child ? Please advise
